Creamy Tuscan Orzo (Print Version)

# Ingredients:

→ Base

01 - 1/4 teaspoon Italian seasoning
02 - 4 cloves garlic, minced
03 - 1/2 medium onion, chopped
04 - 2 tablespoons butter
05 - 1 tablespoon olive oil

→ Pasta & Liquids

06 - 1 cup heavy cream
07 - 2 cups chicken or vegetable broth
08 - 1 cup uncooked orzo pasta

→ Additions

09 - 1/4 cup sun-dried tomatoes
10 - 1 tablespoon lemon juice
11 - Salt and pepper to taste
12 - 1/4 cup fresh basil, torn
13 - 2 cups fresh baby spinach
14 - 1/2 cup grated parmesan cheese
15 - 1 teaspoon Dijon mustard

# Instructions:

01 - Heat butter and oil in a pot, then cook onions till soft (around 3-4 minutes). Toss in garlic, seasonings, mustard, tomatoes, lemon juice, and orzo.
02 - Stir in cream and broth. Let it bubble while stirring until orzo is tender, about 10 minutes.
03 - Take the pot off the heat. Mix in parmesan, basil, and spinach. Cover for a bit so it thickens nicely.

01 - Good as a side or a main course
02 - Choose sun-dried tomatoes in oil for best results
03 - Add more liquid if the orzo seems too dry
