Grain-Free Valentine Cookies (Print)

Chewy almond and coconut flour cookies coated with a pink-tinted chocolate glaze. A fun, healthier treat for Valentine’s Day.

# Ingredients:

01 - ½ cup coconut flour.
02 - 2 cups almond flour.
03 - ½ teaspoon salt.
04 - ½ teaspoon baking soda.
05 - 1 egg.
06 - ¼ cup stevia.
07 - ¼ cup sugar.
08 - ½ cup softened butter.
09 - ¼ cup coconut oil.
10 - 1½ teaspoons vanilla.
11 - 1 spoon coconut oil for glaze.
12 - ½ cup white chocolate chips.
13 - Sprinkles.
14 - Pink food coloring.

# Steps:

01 - Stir together the salt, flours, and baking soda.
02 - Beat the butter, coconut oil, sugar, and stevia. Add the vanilla and egg afterward.
03 - Gradually add your flour blend to the wet mixture. Roll into a ball and cover.
04 - Let the dough sit in the fridge for at least an hour, maybe overnight.
05 - Flatten it out between sheets of parchment until it’s ¼ inch thick. Cookie-cut shapes, bake at 350°F for 10-13 minutes.
06 - Melt chocolate with a little oil and a few drops of food coloring. Dip and sprinkle away.

02 - Lasts a week in a closed container.
03 - Freeze plain cookies up to 3 months.
