Stir together the salt, flours, and baking soda.

Beat the butter, coconut oil, sugar, and stevia. Add the vanilla and egg afterward.

Gradually add your flour blend to the wet mixture. Roll into a ball and cover.

Let the dough sit in the fridge for at least an hour, maybe overnight.

Flatten it out between sheets of parchment until it’s ¼ inch thick. Cookie-cut shapes, bake at 350°F for 10-13 minutes.

Melt chocolate with a little oil and a few drops of food coloring. Dip and sprinkle away.
