White Chicken Chili (Print Version)

01 - 1 medium onion, chopped small
02 - 4 cups chicken stock
03 - 2 cups shredded, cooked chicken
04 - 1 cup frozen corn (optional)
05 - 2 cloves garlic, finely chopped
06 - 1 can (4 oz) diced green chilies
07 - 2 cans (15 oz each) white beans, rinsed and drained

→ Seasonings

08 - Salt and pepper as needed
09 - 1 teaspoon chili powder
10 - 1 teaspoon ground cumin
11 - 1/2 teaspoon smoked paprika

→ For Creaminess

12 - 1/2 cup heavy cream
13 - 4 ounces softened cream cheese

# Instructions:

01 - In a big pot on medium heat, sauté your onion and garlic until soft and fragrant.
02 - Throw in your cumin, chili powder, paprika, salt, and green chilies. Stir well to coat everything.
03 - Pour in the broth, followed by your chicken, beans, and optional corn. Let it simmer gently for 15 to 20 minutes.
04 - Mix in the cream cheese until melted, then pour in the heavy cream. Stir until smooth and creamy.
05 - Scoop into bowls while it's hot. Top with goodies like shredded cheese, cilantro, or lime if you'd like.

# Notes:

01 - Mash some white beans ahead if you'd like your chili thicker.
02 - Want it spicier? Add diced jalapeños or a pinch of cayenne.
03 - Corn is totally optional, but it adds sweetness and a pop of color.
