Preheat your oven to 350°F and pop 30 liners into cupcake trays.

Stir together flour, sugar, cocoa, baking soda, and salt in a big mixing bowl.

Blend hot water, oil, vinegar, coffee (if using), and vanilla. Stir this into the dry mix until it just comes together.

Spoon batter into liners, filling about 2/3 full. Bake for 12-15 minutes until a toothpick comes out clean.
