Best Chocolate Cupcakes (Print Version)

# Ingredients:

01 - 3 cups (372g) plain white flour.
02 - 2 cups (400g) white sugar.
03 - 1/2 cup (40g) cocoa powder without sweetener.
04 - 2 teaspoons of soda for baking.
05 - 1 teaspoon fine salt.
06 - 2 cups (474ml) boiling water.
07 - 3/4 cup (177ml) cooking oil.
08 - 2 tablespoons (30ml) plain white vinegar.
09 - 1 tablespoon instant coffee powder (optional).
10 - 1 teaspoon vanilla.

# Instructions:

01 - Preheat your oven to 350°F and pop 30 liners into cupcake trays.
02 - Stir together flour, sugar, cocoa, baking soda, and salt in a big mixing bowl.
03 - Blend hot water, oil, vinegar, coffee (if using), and vanilla. Stir this into the dry mix until it just comes together.
04 - Spoon batter into liners, filling about 2/3 full. Bake for 12-15 minutes until a toothpick comes out clean.
05 - Let them cool down fully, then top with your favorite frosting.

# Notes:

01 - Stick with natural cocoa, not Dutch process.
02 - Coffee powder makes the chocolate flavor pop.
03 - Freeze them with or without frosting if needed.
