05 - 1/2 cup plain flour.
06 - 2 eggs, warmed to room temperature.
07 - 3 tablespoons olive oil.
08 - 1/2 cup parmesan, grated.
09 - 1 1/4 cups plain panko crumbs.
10 - 4 chicken cutlets (about 1 1/4-1 1/2 pounds), about 3/4-inch thick.
11 - Fresh parsley (optional, for garnish).
12 - Lemon slices (optional, for serving).

# Steps:

01 - Get your oven heated up to 425°F. Cover a baking tray with foil. Arrange 3 shallow dishes for dredging nearby.
02 - Combine flour with seasonings in the first dish. Whisk the eggs in the second dish. Mix olive oil, parmesan, and panko crumbs in the third.

04 - Put the chicken on your prepared baking tray. Cook 18-22 minutes until golden brown and the inside reaches 165°F.
05 - Allow the chicken to rest for 3-5 minutes before cutting it up. Add parsley and lemon on top if you’d like.

# Notes:

01 - Air fryer works too at 400°F for 10-14 minutes.
02 - You can also pan fry for 5-7 minutes on each side.
03 - Thicker chicken breasts can be sliced horizontally for cutlets.
