Chicken Wild Rice Soup (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 2 tablespoons butter
03 - 3/4 cup wild rice, uncooked

→ Vegetables

04 - 1 medium onion, diced
05 - 2 carrots, peeled and finely chopped
06 - 1 stick of celery, finely diced
07 - 3 garlic cloves, minced

→ Soup Base

08 - 4 cups of chicken broth
09 - 1/4 cup of flour
10 - 1 teaspoon of Italian herbs
11 - 1 cup heavy cream
12 - 1 pound chicken breast, cut into small pieces
13 - Salt and pepper, adjust to your taste
14 - Chopped fresh parsley (optional)

# Instructions:

01 - Follow the instructions on the package to prepare the rice.
02 - Sauté carrots, onions, and celery in butter and oil for roughly 7 minutes till soft.
03 - Stir in garlic and flour, cooking another minute. Gradually pour in broth while mixing to combine.
04 - Stir in seasonings, cream, chicken pieces, and rice. Cook another 8-10 minutes over a simmer until chicken is done.
