# Ingredients:

→ Crust Basics

01 - 3/4 cup cubed unsalted butter, chilled
02 - 1/2 cup white sugar
03 - 1 1/2 cups plain flour
04 - A pinch of salt (1/4 tsp)

→ Pineapple Layer

05 - 1 cup crushed pineapple, drained thoroughly
06 - 2 eggs, large
07 - 1/2 tsp leavening agent (baking powder)
08 - 1 tsp vanilla essence
09 - 1 cup sugar
10 - 1/4 cup flour

→ Garnish

11 - Powdered sugar for sprinkling

# Steps:

01 - Get a 9×13 pan ready with parchment paper, and set your oven to 350°F.
02 - Combine your flour, sugar, and salt in one bowl. Work in the cold cubes of butter until crumbly. Spread into the lined pan evenly.
03 - Put the crust in the oven for 15 minutes until it looks a little golden. Let it cool a bit after baking.
04 - Beat eggs with sugar until smooth. Stir in the flour, baking powder, and vanilla. Add the drained pineapple last and fold gently.
05 - Spread the pineapple mix over your crust evenly. Bake it for 25–30 minutes until firm along the edges.
06 - Let it cool down completely. Generously sprinkle powdered sugar over the top before cutting it into squares.

# Notes:

01 - For a more tropical twist, mix in 1/2 cup of shredded coconut with the pineapple.
02 - Add some toasted coconut flakes or fresh pineapple on top if you'd like.
03 - Keep these stored in the fridge for up to 5 days. Bring to room temp before eating.
