Pizza Enchiladas Beef (Print)

Spicy tortillas full of beef, crispy bacon, and loads of cheesy goodness baked in a bright tomato sauce.

# Ingredients:

→ Filling

01 - 8 big wheat tortillas
02 - 35 g bacon, crumbled
03 - 100 g shredded mozzarella
04 - 250 g ricotta cheese
05 - 1 tablespoon Italian herbs
06 - 80 ml pizza sauce
07 - 1 tablespoon chopped garlic
08 - 85 g pepperoni, chopped up
09 - 1 medium green bell pepper, diced
10 - 1 cup chopped yellow onion
11 - 450 g lean ground beef

→ Topping

12 - 30 g bacon, in crumbles
13 - 85 g sliced pepperoni
14 - 250 g shredded mozzarella
15 - 480 ml pizza sauce

# Steps:

01 - Go ahead and dish out the hot enchiladas right away.
02 - Pop the pan in the oven for about 20 to 25 minutes. You'll know it's ready when the cheese is melted and the edges turn golden.
03 - Pour pizza sauce all over, scatter mozzarella, lay on the pepperoni slices, and sprinkle on bacon. Make sure everything gets some topping love.
04 - Spray some nonstick stuff on a baking tray. Pack those rolled tortillas in snug, one after the other.
05 - Spread each tortilla out, spoon some filling in the middle, then roll them up tight.
06 - Take the pan off the heat. Blend in pizza sauce, Italian herbs, ricotta, mozzarella, and bacon till it's all mixed up and smooth.
07 - Add the chopped garlic and stir it in. Let it cook about two minutes more.
08 - Throw in onion, green pepper, and pepperoni with the beef. Keep cooking, stirring every now and then, until the veggies get soft.
09 - Cook the ground beef in a big pan over medium-high, breaking it up as you go. Fry until it looks nice and brown everywhere.
10 - Crank the oven up to 190°C. Set it to top and bottom heat.

# Notes:

01 - Change up the bacon or pepperoni if you want. Try mild salami or less bacon for a gentler taste.
