Sausage Egg Cheddar Roll-Ups (Printable Version)

Fluffy eggs, hearty sausage, and cheddar cheese tucked inside crisp flour tortillas for a satisfying breakfast treat.

# What You'll Need:

→ Filling

01 - 1 package breakfast sausage
02 - 6 large eggs
03 - 60 ml milk
04 - 0.5 teaspoon salt
05 - 0.5 teaspoon ground black pepper
06 - 2 tablespoons unsalted butter
07 - 120 g shredded cheddar cheese

→ Assembly

08 - 6 large flour tortillas

# Steps to Follow:

01 - Heat a large skillet over medium heat.
02 - Crumble breakfast sausage into the skillet and cook, stirring occasionally, until browned and fully cooked through, approximately 5 to 7 minutes.
03 - Transfer cooked sausage to a paper towel-lined plate to drain excess fat.
04 - In the same skillet, melt unsalted butter over medium-low heat.
05 - Crack eggs into a bowl. Add milk, salt, and black pepper. Whisk until fully combined and smooth.
06 - Pour egg mixture into the skillet with melted butter. Allow eggs to begin setting at the edges before gently stirring with a spatula from the edges toward the center. Continue cooking, stirring occasionally, until eggs are softly set and creamy.
07 - Remove skillet from heat. Stir in cooked sausage and shredded cheddar cheese until evenly incorporated.
08 - Place flour tortillas on a flat work surface. Divide the egg, sausage, and cheese mixture evenly among the tortillas, placing the filling in the center.
09 - Fold in the sides of each tortilla and roll up tightly from bottom to top to enclose the filling.
10 - If desired, heat a nonstick skillet over medium heat. Place roll-ups seam side down and toast until the tortillas are golden and crisp, about 1 to 2 minutes per side.
11 - Serve roll-ups warm.

# Additional Notes:

01 - Substitute turkey or plant-based sausage for a lighter alternative.
02 - For an even creamier texture, use heavy cream instead of milk.
03 - Add diced bell peppers or onions for extra flavor and texture.
04 - Experiment with different cheeses such as pepper jack or mozzarella for variety.
05 - Brushing tortillas with melted butter before toasting enhances crispiness.
