Wash the wings in cool water, then dry them well with paper towels. Dry skin helps them crisp up nicely. Sprinkle salt, black pepper, garlic powder, and smoked paprika over the wings in a big bowl. Mix around till they're evenly covered.

Crank your oven to 400°F (200°C). Put the wings on a rack that's sitting on a foil-covered tray. Let them bake for about 40 to 45 minutes, flipping them once halfway through. They'll be golden and crunchy when done.

Heat up the oil in a heavy pot or a deep fryer till its temperature is around 375°F (190°C). Cook the wings in smaller groups for about 8-10 minutes each batch. Once they're done and golden, let them sit on some paper towels to drain.

In a smaller-sized pot, dump in the honey, hot sauce, brown sugar, soy sauce, vinegar, and (if you like) cayenne. Heat them together on medium. Stir it every so often until it bubbles and thickens a bit, maybe 3 minutes or so.

Put your cooked wings into a large bowl. Pour the sweet-spicy sauce all over, and toss them around till they’re covered completely in the glaze.
