Turn plain chicken into a fancy home-cooked meal with this mouthwatering blend of juicy chicken, crunchy bacon, and mushrooms swimming in a velvety Riesling cream sauce. Served with cheesy butter pasta, this dish beats restaurant food any day and comes together in less than 60 minutes.

While trying to copy my favorite restaurant dishes, I stumbled on this recipe that turned out way better than what I was aiming for. The way the Riesling wine makes that smooth, clingy sauce just takes everything to another level.

Premium Components

  • Plump chicken breasts: Get them similar in size
  • Crispy bacon: Gives wonderful richness
  • Cremini mushrooms: Add a woodland flavor
  • Dry Riesling: Forms the key sauce element
  • Heavy cream: Makes everything luxuriously smooth
  • Good pasta: Catches all that amazing sauce

Cooking Method

Bacon Start:
Cook bacon till golden and crispy. Keep the tasty drippings in the pan to boost flavor throughout your cooking.
Chicken Technique:
Coat cutlets in seasoned flour mix, making a nice outer layer that helps thicken your sauce while keeping the meat juicy.
Mushroom Magic:
Cook mushrooms in butter until they're golden brown, letting all their water cook off to make their taste stronger.
Sauce Creation:
Make your velvety sauce by cooking down the Riesling first, then slowly adding cream until it's just the right thickness.

What makes this dish so amazing is how each flavor builds on the last, from the first hint of bacon to the final creamy wine sauce.

Tasty Side Options

Dish it up over buttery pasta with parmesan or smooth mashed potatoes. Throw in a Caesar salad with homemade dressing for a complete dinner. Don't forget some garlic bread to mop up all that yummy sauce.

Fun Twists

Switch things up by using chicken thighs for juicier meat, or try different mushroom types. Play around with other dry white wines like Chardonnay or Pinot Grigio to create your own flavor twist.

Keeping Leftovers

Store any extras in a sealed container for up to four days. Warm it up slowly on low heat to keep the sauce nice and smooth. Skip the microwave or your sauce might split.

Ingredients

→ Chicken and Bacon

01 2 big chicken breasts, sliced in half lengthwise
02 Enough flour to coat chicken lightly in a thin layer
03 5-6 bacon strips, chopped into smaller pieces
04 Pinch of garlic powder, about 1/2 teaspoon
05 Add a sprinkle of salt and as much pepper as you like

→ Sauce

06 7 oz cremini mushrooms, cut into thin slices
07 A small scoop of butter, around 2 tablespoons
08 3 garlic cloves, chopped finely or minced
09 3/4 cup of heavy cream for a rich finish
10 1/4 teaspoon of dried Italian herb mix
11 1/2 cup Riesling or another sweet white wine

→ Pasta (Optional)

12 About 8 oz of spaghetti, cooked to your liking
13 Shave 1/2 cup of parmesan cheese (freshly grated tastes better)
14 A couple of tablespoons of butter, melting into the pasta

Instructions

Step 01

Crisp up the bacon in a skillet. Set it aside but keep 2-3 tablespoons of bacon fat in the pan.

Step 02

Cover chicken in flour after seasoning. Sear it in the leftover bacon fat for 4-5 minutes on each side until it's got a golden crust.

Step 03

Cook the mushrooms in melted butter. Toss in the garlic, wine, and cream. Let it simmer until it thickens.

Step 04

Put chicken and bacon back into the pan. Let it cook for about 5 minutes until the chicken's done all the way through. Side it with pasta, if you'd like.

Notes

  1. Pairs well with or without pasta as a side.
  2. Watch the salt since bacon already adds plenty.
  3. Get your pasta done when the chicken is almost ready.

Tools You'll Need

  • Large pan or skillet for cooking
  • Big pot for boiling pasta (if using)
